I’m happy to say that the second episode of mine and Nina James’ YouTube series Tastes Like Nice is out and it’s all about Easy To Make Bunny Cupcakes, which really are easy to make not to mention really fun!

I love making these with her because she really gets to play around with the decorations and often, in the end, we get a mix of the funniest, but best looking ‘bunny’ cupcakes that look like they belong to the craziest crew on the block! This recipe which doesn’t require that much admin or ingredients yields some pretty tasty vanilla cupcakes that have been flop proof every time I’ve whipped them up, so don’t worry about coming out with average cake (some vanilla cupcakes can be so average). The icing I use is a pretty standard butter cream icing, but if you don’t feel like it, you could always replace it with a yummy marshmallow frosting.

Ok so here is episode two, once again I’d love to hear any feedback, obviously, we are still very new at this whole videoing thing and slowly but surely we’re learning what works and what doesn’t but I’d love to hear from you guys too. I’d also LOVE to hear if you try this recipe out or the Rice Krispie one from our first episode.

Vanilla cupcakes – Makes 12

° 125g butter

° 150g castor sugar

° 1 teaspoon vanilla essence

° 2 eggs

° 200g cake flour

° 1 teaspoon baking powder

°  125ml milk

Method:

With an electric mixer cream the butter and sugar together for about 3-4 minutes

Add the vanilla and mix well

Add the eggs one at a time. Beat well after each addition.

Add the flour, baking powder and milk to the mixture and beat well.

Divide the mixture evenly into 12 cupcakes liners. They should be about 3/4 of the way full.

Bake at 160° for 15-20 minutes or when a toothpick comes out clean.

 

How to decorate the cupcakes:

° Pink sprinkles for bunnies, chocolate sprinkles for bears

° Mini Oreo cookies and mini marshmallows for ears

° Smarties

° Candy eyes – you can get these online or at numerous bake stores.

Method:

1. Take your iced cupcake and dip it into a bowl of sprinkles to give your bunny some fur.

2. Add Smarties or candy eyes for eyes.

3. Add a Smartie as a nose.

4. Add Oreo cookies or mini marshmallows as ears.
