Roasted Butternut and Apple Soup

Every now and then I get sent some really cool gadgets to try out, which is pretty fun to do especially when they involve cooking. Have any of you ever heard of a Greenis Blender before? They’re a brand of high-powered smart blenders that you can do all sorts of cool things with and when I say cool things I mean that you can connect to them via Bluetooth and then operate them from your smartphone, creating all sorts of culinary dishes.

When my Greenis first arrived I was slightly intimidated, but it took me the whole of 12minutes to totally get into it and want to learn more. I think the best way to try to describe it would be that it’s kind of like a little robot (that I have named Charles) that makes you delicious things like Roasted Butternut and Apple Soup. I love the idea that not only can it actually juice things, but you can also make hot things in it too. So it heats up things by itself, like hot chocolates, sauces, soups etc. This guy can make you fresh almond milk in 2 minutes and it can even make a cappuccino! What? I know right. Haha.

Peanut butter and chocolate pancakes

Sometimes I wake up in the mornings on a weekend and just feel like pancakes. I’m not really a breakfasty type person, but every now and then sitting down in front of a stack of warm pancakes covered in syrup is exactly what I feel like. This morning was one of those days and seeing as it was also Father’s Day it gave me the perfect excuse to get my pancake making pants on! I.e. stay in my pyjamas.

Now pancakes are awesome because you can literally cover them in anything and they’ll taste good, but today I thought that I would make a batch of Peanut Butter And Chocolate Pancakes because what could be better than peanut butter and chocolate slapped together then shaped into soft fluffy circles of amazingness? Nothing, that’s what.

Cinnamon and sugar doughnuts

Doughnuts, doughnuts, everybody loves doughnuts. Last week Friday was International Doughnut Day, yes a whole day has been dedicated to these awesome circular nuggets of happiness, personally I think they should get a whole month and all shops everywhere should have to give out doughnuts with every purchase made, but that’s just me.

In the past, I have baked quite a few batches of doughnuts, but I have never attempted to deep fry them. I’ve always been a bit nervous too, but over the weekend I decided to conquer my doughnut-frying fear and gave the recipe below a bash! It may also be because the recipe I was trying didn’t require me to make the dough and then let it sit for 34 hours whilst singing Mariah Carey to it to make it rise! One of my pet peeves is when a recipe requires a whole days prep time, it’s like dangling a carrot in front of a donkey, or should I say a carrot cake.

Scones with vanilla pouring cream and apricot jam

Did any of you watch the Royal Wedding on Saturday? I did and I couldn’t help but wonder what was going through Meghan Markle’s mind. The whole thing is so grand and out of a storybook that I wonder if it felt real to her in anyway, if you know what I mean? What did you guys think of her dress and how beautiful was her tiara? My goodness, it was such a piece of art.

All this Royal wedding hype really got me in the mood for nice pillowy scones, so I thought that seeing as the Royal Wedding fever is still going strong and it was World Baking Day a couple of days back I’d share another recipe from my baking series that I’ve started with Royal Baking Powder. So everyone say hello to my foolproof recipe for soft Scones with Vanilla Pouring Cream and Apricot Jam.

Swiss Roll get in my mouth

There is nothing quite like a good old-fashioned Swiss Roll, the sponginess of it, the jam centre and the way it just makes you want to sit in the sun and drink sweet sweet tea while you wish you could nap like a fat spoilt cat. I love myself a slice or three of Swiss Roll but to tell you the truth I have never ever made one. Ever. So I pulled a recipe out and together with NJ we whipped up this vanilla flavoured apricot jam Swiss Roll.

This cake is really not hard to make, I thought that the rolling of the sponge might freak me out a bit but it rolled up just like the recipe said it would and it didn’t break! Hooray. It was also a great recipe to make with Nina because it’s a fun and easy cake to put together. She unrolled it, spread the jam, rolled it up again and then sprinkled it with icing sugar, so she basically made the whole thing 🙂 Rex was the official taste-tester on this project. It also didn’t require too many ingredients, which is a huge plus!

Best Butter Cookies

Happy Easter everyone! I really hope you have all had a wonderful weekend so far and that you have been surrounded by family, friends, food and loads of chocolate eggs!

You may or may not have noticed that I’ve been sharing a lot more recipe posts lately. I’ve always loved being in the kitchen, ever since I was little kid and I’m so chuffed that Nina James loves baking and cooking as much as I do because it’s such a fun thing for us to do together and it doesn’t hurt that you get to eat the end result, which is not the story when you’re making pies out of playdough.

Yesterday we whipped up these very morish butter cookies and then sat in Nina’s room and had a full on tea party. She even picked a dress out of her cupboard and changed for the occasion, it was so sweet!
