If you are a fan of a good old-fashioned vanilla cupcake but sometimes feel like jazzing it up a bit then do I have a treat for you. Everyone say hello to these Raspberry, Custard and Maple Syrup Cupcakes made from soft sponge, smooth vanilla custard, maple syrup and a hint of tart raspberry. It’s my first time making them and I was so happy with how they came out because they’re not only pretty to look at, but they’re 100% addictive too.

I must be honest and I’m not sure if you guys feel the same, but I struggle with vanilla cupcake recipes. I’ve tried what feels like a thousand of them, but there is less than a handful that I’d share with anyone asking for a really nice vanilla cupcake recipe, luckily I can add this one to that list. These were actually some of the best I’ve tasted, so this recipe is definitely a keeper.

Nutella and Coconut Chocolate Chip Cookies

Good old Chocolate Chip Cookies, they are always a crowd pleaser even if you have people in the crowd that claim to not really like chocolate. Ahem…Andrew Berry 🙂

I have tried a fair amount of chocolate chip cookie recipes out in my life but I have only ever written two in my cookbook, my cookbook which only the recipes I absolutely love and trust go in to and I’m super excited to add this one to it.

Normally when I make these types of cookies I only add chocolate chips and nuts, but yesterday I decided to make Nutella and Coconut Chocolate Chip Cookies. I’m talking a double hit of gooey yummy dark and milk chocolate together with a nice subtle hint of toasted coconut. These cookies came out of the oven and lasted less than half a day, in fact, they didn’t even make it within an arm’s length of a cookie jar, which I guess is a good sign.

Spanish Hot Chocolate

Ok, so it’s been pretty freezing the last couple of days out here in Africa! I actually can’t believe the snow that has been falling in the Cape. I wish the same thing would happen here because it looks so beautiful plus we never ever get to play in the snow.

So seeing as it’s been so cold I thought I would mess around a bit in the kitchen with some hot chocolate recipes. I’m a huge fan of hot chocolates, BUT I hardly ever go out and have one and think, man that was amazing I can’t wait to come back here for another round. They’re always either too watery or not chocolatey enough, or they just taste like cheap powder mixed with way too much milk. I like decadent hot chocolates, ones that make you hold onto your cup like it’s the last ornate item on earth! One where every sip takes you on a Unicron ride around the sun.

So I’m pretty pleased to be sharing this next recipe with you because it’ll have you unicorn-ing it up and down your street at all hours of the night. Guaranteed. I have no idea what I’m going on about but just go with me here.

Roasted Butternut and Apple Soup

Every now and then I get sent some really cool gadgets to try out, which is pretty fun to do especially when they involve cooking. Have any of you ever heard of a Greenis Blender before? They’re a brand of high-powered smart blenders that you can do all sorts of cool things with and when I say cool things I mean that you can connect to them via Bluetooth and then operate them from your smartphone, creating all sorts of culinary dishes.

When my Greenis first arrived I was slightly intimidated, but it took me the whole of 12minutes to totally get into it and want to learn more. I think the best way to try to describe it would be that it’s kind of like a little robot (that I have named Charles) that makes you delicious things like Roasted Butternut and Apple Soup. I love the idea that not only can it actually juice things, but you can also make hot things in it too. So it heats up things by itself, like hot chocolates, sauces, soups etc. This guy can make you fresh almond milk in 2 minutes and it can even make a cappuccino! What? I know right. Haha.

Peanut butter and chocolate pancakes

Sometimes I wake up in the mornings on a weekend and just feel like pancakes. I’m not really a breakfasty type person, but every now and then sitting down in front of a stack of warm pancakes covered in syrup is exactly what I feel like. This morning was one of those days and seeing as it was also Father’s Day it gave me the perfect excuse to get my pancake making pants on! I.e. stay in my pyjamas.

Now pancakes are awesome because you can literally cover them in anything and they’ll taste good, but today I thought that I would make a batch of Peanut Butter And Chocolate Pancakes because what could be better than peanut butter and chocolate slapped together then shaped into soft fluffy circles of amazingness? Nothing, that’s what.

Doughnuts, doughnuts, everybody loves doughnuts. Last week Friday was International Doughnut Day, yes a whole day has been dedicated to these awesome circular nuggets of happiness, personally I think they should get a whole month and all shops everywhere should have to give out doughnuts with every purchase made, but that’s just me.

In the past, I have baked quite a few batches of doughnuts, but I have never attempted to deep fry them. I’ve always been a bit nervous too, but over the weekend I decided to conquer my doughnut-frying fear and gave the recipe below a bash! It may also be because the recipe I was trying didn’t require me to make the dough and then let it sit for 34 hours whilst singing Mariah Carey to it to make it rise! One of my pet peeves is when a recipe requires a whole days prep time, it’s like dangling a carrot in front of a donkey, or should I say a carrot cake.
