Tres Leche Cake

June 24, 2022

This Tres Leche Cake or a 3-Milk Cake is absolutely amazing! Easy to make, soft, light and the flavours are sweet, milky and beyond delicious.

I can honestly say that this is one of my all-time favourite cakes to make and eat, and it will have you coming back for thirds, if not fourths! Trust me because I know what I’m talking about, I think haha 🙂

Tres Leche CAKE:
140g or 1 cup flour
1 & 1/2 tsp baking powder
1/4 tsp salt
5 eggs – separated
200 grams or 1 cup sugar, divided into 3/4 & 1/4 cups
1 & 1/2 tsp vanilla essence
1/3 cup milk

235mls evaporated milk
1 tin condensed milk
1/4 cup cream

250mls cream
1 &1/2 tsp icing sugar
Punnet of fresh strawberries

1. Preheat oven to 175°C and grease 2 x standard round cake tins.

2. In a med-size bowl add the flour, baking powder and salt. Set aside.

3. Sep the eggs into 2 other bowls. Egg yolks in one and egg whites in another. Beat the egg yolks on high with 3/4 cup of sugar until light and fluffy

4. Mix in the milk and vanilla essence. Then add the flour mixture to the egg yolk mixture and beat on low until just combined.

5. With clean beaters, beat the egg whites on a high until soft peaks form. Then add the remaining 1/4 cup sugar & beat on high until egg whites are stiff.

6. Gently fold the egg whites into the yolk mixture. Divide evenly between the cake tins & bake for ±25 mins, until golden brown or when a toothpick inserted in the middle comes out clean. Let them cool slightly in the pans before turning them out onto a rack to cool completely.

7. Milk syrup – In a jug mix the evaporated milk, condensed milk and cream together.

8. Once the cakes have cooled poke holes all over their surfaces with a skewer/fork. Place 1 layer on a plate & pour half of the milk syrup all over the surface. Let the cake absorb the syrup while you whip up the cream for the top.

9. Cream – In a bowl beat the cream and icing sugar until med-soft peaks form.

10. Dollop half the whipped cream onto the 1st layer, then arrange sliced strawberries over the top.

11. Place the 2nd cake layer on top of the first and pour the rest of the milk syrup evenly over it. Again let it stand so the syrup soaks in.

12. Add a few big dollops of cream to the top of the cake and spread it out then decorate it with sliced strawberries.
