Chia seeds, what are they? Why do people eat them? I mean before I started tinkering around in the kitchen with Nicole I had never had chia seeds before. This super food has loads of benefits that deliver a massive amount of nutrients with very few calories and they are really versatile!

The first time I tried a chia pudding I wasn’t too sure about the texture, it kind of made me feel a bit wobbly on the inside, but now that I’ve had a few I’m starting to really like them, especially when they topped with lots of delicious fruit. These puddings, which are actually breakfasts do require a bit of prep time, your chia seeds need to soak for at least 4 hours or preferably over night, but they are so worth it.

Healthy Homemade Snickers Bars

I’m guessing that there aren’t a lot of people out there that don’t like a good old fashioned Snickers Bar, it’s like a match made in sweet heaven – caramel, chocolate, and nuts all in one glorious bite!

Now, what if I said that Nicole and I stumbled across a recipe for a healthy Vegan, sugar-free Snickers Bar that tastes even better than the real thing, I kid you not. I’m a huge fan of chocolate and all things sweet, so again I was a little skeptical but super interested to see how these bars would turn out and if they held a candle to the real thing. PS: They came holding blow torches!

When I think of a brownie I think of a dense, sweet, slightly chewy chocolatey extravagancer that I want to make my best friend. I don’t think about making them with sweet peas and chia seeds, but on my quest to experiment a bit more in the world of Veganism, Nicole and I decided that we had to try making a brownie that would make anyone feel warm and fuzzy inside.

In case you missed my first post about this Vegan series, I’ll just quickly catch you up. My friend Nicole has just become a gluten-free, sugar-free Vegan due to health reasons and so we decided that together we’d explore some recipes and share all the good ones with you guys.

Easy to make beetroot and turmeric hummus

I’m really excited to introduce a new recipe series to my blog, one I have started with my good friend Nicole who has just recently become vegan, as well as sugar and gluten free due to health reasons. She is having to learn how to enjoy food in a completely different way and because I have only ever made a couple of vegan dishes before, I thought it would be cool to explore this culinary world with someone who has had to quickly learn all about it. We’ll be sharing delicious and easy recipes over the next few weeks, starting from tomorrow 🙂 

This series will be made up of recipes that are all vegan as well as gluten and sugar-free, we have made quite a number of dishes to date and I’m pretty surprised at some of the things one can make using absolutely no products that come from animals, it’s pretty damn cool! Spending some time with Nicole and learning a bit more about this world has been very interesting, but I must be honest up front and say that I won’t be turning vegan anytime soon, I will, however, be making more of an effort to eat less meat and at least once a week create an all veggie dish.

So if you have ever thought about perhaps dabbling a bit in the world of veganism, then stick around for some pretty quick and easy recipes that taste really nice in the traditional sense of the word and some that taste nice in more of an interesting way.

Earlier today Anna-Belle and I drove through to Licorish Bistro in Nicolway who in collaboration with Whisking it hosting a 3-day pop-up Vegan restaurant. So just for today, Friday and Saturday they will be serving a bespoke Vegan menu full of some of the most delicious things you’ll probably ever stuff into your face.

We were actually lucky enough to try out not one but six of the dishes on their pop-up menu and by the end of it we were not only completely stuffed, obviously, but also so very happy that we got to sample some of the really tasty Vegan dishes that won’t make you feel like you’re missing out somehow.

Tea time with my girls.

On Saturday afternoon I had a bit of a tea party at our flat. I baked some vegan cookies, set out some of my most colourful china and invited some friends over. I haven’t seen these 3 faces in one room all together for a while, so I was super happy to have them all at my house.

We tried out some teas from a lovely lady who came to see me the other day about her product Lady Bonin’s Tea Parlour. She left me some samples and the girls and I tucked into them on Saturday. The tea was fragrant and really nice, subtle but nice and they complimented the super sweetness of my cookies well. I’m getting some of this tea into Wolves soon, you must come try it out if you like.
