Chocolate, Caramel and Coffee Bundt cake

The other day I was sitting at home and I felt like a piece of coffee cake, but then suddenly I also felt like a piece of chocolate cake so I thought, why not make a coffee and chocolate cake and then throw some gooey caramel in there for good measure. I mean it’s always fun to fill your pie hole with as much sugary goodness as humanly possible in one sitting right? Right.

So that is exactly what I did! This cake is bitter, sweet and delicious and goes down a treat with a good cup of strong coffee. I think that I should also state here that if you feel like the caramel might be slight overkill, then you can totally leave it out and instead add some whipped vanilla cream or just enjoy a nice thick slice of soft coffee flavoured chocolate cake on its own. No one will judge you, I promise. Mainly because no one else who may be reading this post will ever know.

One Bowl Chocolate Cake

I can’t tell you how often during the day I feel like a fat piece of chocolate cake! I think anyone who hangs out with me a lot probably hears me say this at least once a week. There is just something about a fresh, homemade slice of cake that is pillowy soft and chocolatey that just makes me so happy.

I’ve got to be honest though, I don’t often go to a coffee shop or restaurant and find a good piece of chocolate cake, so more often than not I just land up taking these cravings into my own hands. So when I discover a new recipe that requires minimal effort, ingredients and time and yields a fat piece of yummy homemade chocolate cake, I’m over the moon and this weekend I added another one of them to my list of go-to-recipes and it’s for this One Bowl Chocolate Cake with Velvety Chocolate Icing.

Marvellous Treats

I’m a huge fan of chocolate, it’s one of my favourite things because it always makes me feel so happy. I think about it every day and I more or less have it every day, it’s like one of my best friends who never says a word to me but is always the most fun to be around hehe. Oh man, now I feel like a chocolate, please excuse me while I go get one from my cupboard.

And I’m back…ok so as I was saying I love chocolate and I love baking with it because I think anything chocolate flavoured is a winner and no one ever says ‘Oh chocolate cake, no thanks!’ The other day I tried a new Cadbury Marvellous Creation flavour, their Popcorn Jelly Cola slab which flipping blew my mind. Only once before have I tried a chocolate with popcorn in it and I became an instant fan, but this one not only has popcorn in it but a hint of cola and then these amazing jelly popping bits and pieces. I think I may have just introduced you to your new favourite treat! Let me know if you’ve tried one already.

Easy peasy chocolate cake

Every now and then it nice to bake something that requires very little effort, something that isn’t super fancy but still hits you right in the sweet spot good and proper. Yesterday I really felt like a slice of chocolate cake but I didn’t feel like the mission of making icing for it, luckily for me I’ve been saving this particular recipe in my to-bake folder for a while now and so I thought I would give it a whirl.

This cake is the perfect accompaniment for a hot cup a tea or an easy to transport snack for say a picnic or a packed lunch. As a side note, how cute is my red tiffin that I got from Pilgrimage Spaces? I’ve been looking for one for ages! I love it.

s’mores cake (chocolate + malt + marshmallow)

I love pinning recipes onto my pin board, I like knowing that they’re always there for me to salivate over and hopefully one day attempt.
