Swiss Roll get in my mouth

There is nothing quite like a good old-fashioned Swiss Roll, the sponginess of it, the jam centre and the way it just makes you want to sit in the sun and drink sweet sweet tea while you wish you could nap like a fat spoilt cat. I love myself a slice or three of Swiss Roll but to tell you the truth I have never ever made one. Ever. So I pulled a recipe out and together with NJ we whipped up this vanilla flavoured apricot jam Swiss Roll.

This cake is really not hard to make, I thought that the rolling of the sponge might freak me out a bit but it rolled up just like the recipe said it would and it didn’t break! Hooray. It was also a great recipe to make with Nina because it’s a fun and easy cake to put together. She unrolled it, spread the jam, rolled it up again and then sprinkled it with icing sugar, so she basically made the whole thing 🙂 Rex was the official taste-tester on this project. It also didn’t require too many ingredients, which is a huge plus!

Hot Chocolate Cake

I’m guessing that 98% of you who read this post will agree with me when I say that cake is awesome and so is a good hot chocolate! The other 2% that don’t I’m also guessing have stumbled across my blog by mistake, whilst searching for talking mystical lucky ponies who they are convinced live amongst us and are biding their time before they take over the world.

Here and there on Pinterest I have been seeing quite a lot of something called a Hot Chocolate Cake which combines chocolate cake, chocolate-fudge-like icing, and marshmallow frosting together, which are all drool-worthy components so I was like I need to make me a Hot Chocolate Cake now. Cut to three failed cake bakes and two chocolate icing recipes later and finally I had managed to put together a Hot Chocolate Cake which I thought was worthy of the 98% of you who I know will love it, as well as the remaining 2% and their future leaders The Talking Ponies.

Easy peasy chocolate cake

Every now and then it nice to bake something that requires very little effort, something that isn’t super fancy but still hits you right in the sweet spot good and proper. Yesterday I really felt like a slice of chocolate cake but I didn’t feel like the mission of making icing for it, luckily for me I’ve been saving this particular recipe in my to-bake folder for a while now and so I thought I would give it a whirl.

This cake is the perfect accompaniment for a hot cup a tea or an easy to transport snack for say a picnic or a packed lunch. As a side note, how cute is my red tiffin that I got from Pilgrimage Spaces? I’ve been looking for one for ages! I love it.

Toasted Butter Pecan Cake

I haven’t baked in a while which has made me pretty sad. It’s something I really enjoy doing but I just haven’t found the time these days to just get stuck into it, I really hope that changes soon… I often look at My “Baked Goods” Pinterest board which is overflowing with amazing looking cakes and I wish I could try my hand at them all. So the other day when my friend said that she was coming over for tea I decided to stop whatever I was doing and try make one of the cakes off my board.

After a bit of scrolling and some uncontrollable drooling I settled on a Toasted Butter Pecan Cake recipe because I absolutely love pecan nuts and butter and to me it sounded like an awesome combo. Luckily I had pecan nuts in my freezer so I didn’t have to drive to the shops to buy some. Nothing makes me more despondent that when I’m really amped to make something but I’m missing one ingredient that can in no way just be left out of the recipe, especially when said ingredient is in the title.

Italian Cream Cake

The other day I tried my hand at an Italian Cream Cake. For those of you who have no idea what an Italian Cream Cake is, not to worry I’ll explain…it’s a white cake that originates from the South that is flavoured with coconut and pecan nuts and covered in cream cheese icing. I know what you’re going to say, where does the Italian and cream fit into it? Well the cream is in the batter and as for the Italian, I’m as confused as you are on that one…

Before I stumbled across this recipe, I had also never heard of or tasted an Italian Cream Cake, but now I’m so glad that I’m no longer a stranger to this fluffy coconut-ty cake of loveliness.

Brooklyn Blackout cake and Carrot cake

Yesterday a bunch of our friends who hadn’t yet met Miss Nina James came to the house to see her. It was so nice hanging out with everyone and Nina even managed to stay awake for about 40% of the visit, she just sort of quietly stared at each person who held her, she was probably wondering how the hell so many giant faces could fit in one room at the same time.
