Spicy coconut prawn soup.

Now I know I swore I wouldn’t have soup for a while, but I made this super delicious (even if I do say so myself) dish before my whole detox and it was easy easy easy to make and so so so nice to eat. A little tip though, if you stick to the quantities make sure there are more than 2 of you at home to eat it, it makes a lot and it’s so nice that you don’t want to stop eating, but so rich that if you do have lots you feel quite sick afterwards. Yes, Shane and I went to town on the prawn soup, but it was totally worth the woozyness afterwards.

2 TBL sunflower oil

1 TBL each chopped ginger and garlic

1 small onion, sliced

1 TBL red curry paste

I cup vegetable stock

2 cups coconut milk

half cup bean sprouts

juice of half a lemon

1 stalk lemongrass, sliced

400g prawns, deforsted

Heat the oil in a pot and saute onions, ginger and garlic until soft. Add curry paste and cook for 3 minutes. Add stock, coconut milk and bring to the boil. Reduce heat to simmer. Add bean sprouts, lemon juice and lemongrass. Season to taste. Add prawns and garnish with fresh corriander. Enjoy x xxxx

    yum! i make a cheats version of this: prawns, laksa paste, coconut milk and a bit of water. serve with crusty rolls! x

    laksa paste is available from woolies. one uses it to make coconut based curry soups, like thai soups. you’ll find it by all the other eastern stuff. hope that helps! x
