Fluffy Apple Pancakes

Today is World Apple Day and to celebrate I made a stack of these Fluffy Apple and Cinnamon Pancakes made with fresh Dutiot apples.

These beauts are a little healthier than your regular pannekoek and a great way to add some fibre and antioxidants (Apples are filled with antioxidants. Eating them can reduce the risk of heart disease, cancer, diabetes, and other diseases) to your diet but in a bit of a decadent way 🙂

Brown Sugar Apple, Cinnamon and Pecan Nut Cake

Apple Streusel Cake 

ROASTED BUTTERNUT AND APPLE SOUP

INGREDIENTS:

– 1 cups flour
– 2 teaspoons baking powder
– 2 tablespoons coconut or brown sugar
– 1/2 teaspoon cinnamon
– 1 egg
– 1/4 cup vegetable oil
– 1 cup milk
– 1 medium apple peeled and grated

DIRECTIONS:

1. In a mixing bowl whisk together the flour, baking powder, brown sugar and cinnamon.
2. Then add all the wet ingredients to the dry ingredients and mix gently with a whisk until combined. Do not overmix.
3. Add the grated apple and mix.
4. Preheat a frying pan over medium heat, Spray & Cook the pan. Then using a big serving spoon or a ¼ measuring cup pour pancake batter into the pan and cook for ±3 minutes, or until there are bubbles across the surface of the pancake. Flip and cook for an additional 2 minutes, or until cooked through.
5. Stack them and add a good dollop of golden syrup and a few slices of fresh crunchy apple. Enjoy! 🙂

**This amount of batter will make about ±8 medium-sized pancakes or about ±12 small ones.
