How does a Strawberry Milkshake Cupcake sound to you? When I say Strawberry Milkshake Cupcake I mean it, these suckers taste exactly like what they are named after and are the kind of cupcakes that you’re going to find difficult to stop eating after one, especially because the magic ingredient is Strawberry Nesquick, which is like pink magic powder.

I just recently bought The Hummingbird Bakery Life Is Sweet cookbook off LOOT and in it I found this recipe, which I thought sounded pretty awesome, I mean who doesn’t like milkshake flavoured anything? The answer to this rhetorical question is no one by the way.

Apple Streusel cake

I am not the hugest fan of desserts and cakes that contain cooked apples, or cooked fruit in general – there’s just something about the texture that makes my face shake and not in a good way. But then I tried out this Apple Streusel cake recipe and my opinion on cooked apple pie changed overnight.

This cake is not too sweet, the filling is not too mushy (which is probably why I like it) and the cake bottom is nice and spongy which adds a nice overall texture. Plus this is not the hardest recipe to follow and in the end, you land up with a very flavoursome cake/pie that goes awesomely with something else that I absolutely love and that is vanilla flavoured cream. On a side note, I think vanilla flavoured cream should be sold in handsfree packaging that you can just strap to your face and suck on all day long. Anyone with me?

Easter Bunny Oreo cupcakes

Easter is on it’s way and this year will be the first time that we actually get to indulge in a bit of a Easter egg hunt with Nina James, which I’m really looking forward to. I also thought that it would be fun to create some themed cupcakes, which I don’t really do a lot of, but might make more time for because even though they were a bit of a mission I really enjoyed making them and so did Nina. She was really good at poking and then taking bites out of random ones hehe. Now if I was a baking assistant that’s what I would be doing to. Best job on earth.

These Easter Bunny Oreo cupcakes are literally packed full of Oreos inside and on top, so if you’re a fan then you’re going to like them. A lot.

Toasted Butter Pecan Cake

I haven’t baked in a while which has made me pretty sad. It’s something I really enjoy doing but I just haven’t found the time these days to just get stuck into it, I really hope that changes soon… I often look at My “Baked Goods” Pinterest board which is overflowing with amazing looking cakes and I wish I could try my hand at them all. So the other day when my friend said that she was coming over for tea I decided to stop whatever I was doing and try make one of the cakes off my board.

After a bit of scrolling and some uncontrollable drooling I settled on a Toasted Butter Pecan Cake recipe because I absolutely love pecan nuts and butter and to me it sounded like an awesome combo. Luckily I had pecan nuts in my freezer so I didn’t have to drive to the shops to buy some. Nothing makes me more despondent that when I’m really amped to make something but I’m missing one ingredient that can in no way just be left out of the recipe, especially when said ingredient is in the title.

I’m always keen to try new things when I bake and sometimes I’m a little more experimental than others, so when Jo sent me a recipe for Waffle Cupcakes I knew I had to try them. Now I hear you saying what the blazers is a Waffle Cupcake and how can I get my belly some? I thought the exact same thing and so watched the link, paused for a bit and then bolted for the pantry to get the ingredients that I needed to make me some of these beauties, but I thought I would put a bit of a twist on them and add a bitter Chocolate Tabasco Syrup for fun. After our Jobest Club dinner with Tabasco I landed up with a few extra bottles, so I thought I would experiment. Why not right?

Now I know it sounds a little weird, but actually the sauce turned out really nicely and worked so well on top of these cupcakes because the cake itself is pretty sweet and the syrup is nice and bitter with an awesome bite that goes with them perfectly.

Nina and I had a party

On Saturday I threw a combined birthday slash cake party for myself and Miss James. My idea was to bake a whole lot of cake and then have a bunch of friends over to eat a whole lot of cake. So that’s exactly what I did, I baked for a day and half straight and I tried my damndest to fill our dinning room table with as many icing covered goodies as possible.

I managed to make a Strawberry Cheesecake, an Apple and Pear cake, a Red Velvet cake, Oreo cupcakes, Boston Cream cupcakes, a Brooklyn Blackout cake and a dark Lindt Chocolate cake. I actually baked the Red Velvet twice because I wasn’t happy with the first one. So I think it’s safe to say that I baked my behind off, but it was worth it because it was a lovely afternoon spent with lovely people and I’m happy to report that there were no sugar coma casualties on the day, but I’m almost positive that I may have awakened diabetes in some people.
