These are chewy but soft and full of amazing tidbits like chocolate, pecan nuts and oats! Each bite is so full of goodness that it’s so hard to just stop at one! Luckily this recipe makes a good amount of these guys, so you can go in for a second or third very easily 🙂

A few days ago I said I would share the recipe for the best Chocolate Chip and Walnut Cookies. This recipe is one of my all-time favourites because it never ever fails. I don’t think I have ever used it and come out on the other side with a tray of cookies that will not have you grinning like you’ve just won the cookie lotto! Which by the way I think should totally be a thing. You enter, you win millions of cookies, you die happy. The end.
Just like most of my recipes, this one is short and easy and you can add whatever you like to the base to make all sorts of deliciously soft, slightly chewy cookies. For this particular round, I added some dark chocolate chips and a good handful of walnuts but you can add anything really, chocolate chips, M&M’s, pecan nuts, white chocolate, cranberries, crunchy cereal, peanut butter, speckled eggs etc.
Good old Chocolate Chip Cookies, they are always a crowd pleaser even if you have people in the crowd that claim to not really like chocolate. Ahem…Andrew Berry 🙂
I have tried a fair amount of chocolate chip cookie recipes out in my life but I have only ever written two in my cookbook, my cookbook which only the recipes I absolutely love and trust go in to and I’m super excited to add this one to it.
Normally when I make these types of cookies I only add chocolate chips and nuts, but yesterday I decided to make Nutella and Coconut Chocolate Chip Cookies. I’m talking a double hit of gooey yummy dark and milk chocolate together with a nice subtle hint of toasted coconut. These cookies came out of the oven and lasted less than half a day, in fact, they didn’t even make it within an arm’s length of a cookie jar, which I guess is a good sign.
Last night I tried out this M&M, chocolate chip, peacan nut cookie recipe. The cookies came out chewy, soft, chocolately and super delicious. I had to stop myself from eating a fourth one because I knew my body was about to go into sugar overload and bitch slap my insides.
These were easy to make and even easier to eat. Hope some of you try them out… Thanks Stephanie for the recipe and the good times I had by myself taste testing the bejeezers out of these.
I’m a big fan of cookies, I like them because no one can keep track of how many you’ve eaten. If you say you’ve only had one but in the meantime, you’re chomping down on your 7th, no one will ever know! They’re easy to grab and easy to devour, doing away with any evidence in a matter of seconds. No need for a knife to cut a slice, a cake plate to hold the goods or a fork to help you eat it. Hand, mouth the end!
Today I sat down and thought about everything I would like in a giant cookie, I imagined all the flavours that I thought would go nicely together and then I started putting them aside. Starting with a giant box of Astros (these guys are underrated), peanut butter, a bowl of dark chocolate chunks and finally oats for some extra crunch! All these ingredients looked magnificent together and I felt like they were the perfect combo to make up my Cookie Monster Cookies recipe. I’m calling them this because they feel like the type of cookie the maestro himself would knock another puppet off their perch for!
Time to share a very nice, very simple recipe for some delicious Dark Chocolate and Vanilla Cupcakes with Milk Chocolate Icing. These cupcakes are topped with the kind of rich and smooth icing that will have you eating a cupcake as a kid does, icing first and all over your face, before you bite down into soft vanilla sponge dotted with chunks of real dark chocolate.
I was chatting with some of my friends on Whatsapp a few days back about bran muffins and who has a good recipe for some, which prompted me to get my cookbooks out page through a few recipes. I was adamant to bake something that was going to throw the results of my latest gym session straight out the window!
