Hello guys, the other day I baked some fudge cupcakes that I saw on Diné’s sweet sweet little blog. I needed to take some cake to my friend Leigh’s surprise ‘welcome home and we’re happy you’re engaged’ party. I didn’t have much time, but I whipped these up quick sticks and they were delicious, the icing seriously tasted just like fudge. I actually felt a little sick after I iced them because I obviously dipped my fists into the icing bowl.

Caramel Fudge Icing
° 60g butter ° 6 tbs milk ° 220g brown sugar ° 240g icing sugar
-Heat the butter, milk and brown sugar in a saucepan and stir to combine.
-Bring to the boil, and boil for 1 minute.
-Remove from the heat and add half of the icing sugar.
-Leave it to cool for a few minute and add the remaining icing sugar.
-Mix well with an electric beater.
-You can add some more milk if it is too thick to ice with.
